I found this green bean recipe in a local Ralphs’ Supermarket flyer and in my mind this dish is just about as perfect as you could find.
- 2 lbs. green beans, trimmed
- 1 red bell pepper, cut into 1/2 inch wide strips
- 1 small red onion, sliced
- 2 cloves garlic, sliced
- 2 Tbsp. balsamic vinegar
- 2 tsp. olive oil
- Freshly ground black pepper
- Salt
Preheat oven to 400 degrees F. Place beans, bell pepper, onion, garlic, balsamic vinegar and olive oil on a sheet pan. Toss to coat vegetables with oil mixture. Roast for about 20 minutes or until vegetables reach desired tenderness. Season vegetables with salt and pepper, to taste. Serve immediately. Refrigerate any leftovers. Serves 8.

Sounds yummy and healthy.
Have you tried to make it yet?
I think I will try and pick up some green beans and make it. I’ll let you know how it turns out.
These sound so good! I am going to try this recipe soon. Thanks!
Yum. Have you had a chance to try it?
Yes I did try them and they are very tasty.
I made these tonight and they were delicious!!! I was thinking that they would be a nice dish to bring work for lunch; maybe I’d add a little tofu for protein.
Thanks so much for the recipe!!!!
